Solomon Sparks at Hamiltons

Solomon Ntuli (41) has been working in the Kruger National Park since 1987, rising through the ranks as time progressed. Starting off as a gardener in 1981, he now holds the position of chef at the prestigious Hamilton's Tented Camp. Hamilton's is one of the three sister lodges including Imbali Safari Lodge and Hoyo Hoyo Tsonga Lodge in the Mulawati Concession Area. The lodges fall under the Three Cities hospitality group banner.

Solomon credits his culinary ability to Adam Shabangu, the head chef at Olifants Camp when he started training as a chef. He had previously worked at Satara, where started as a gardener, moving into housekeeping and finally becoming a waiter before his apprenticeship as chef. Solomon is very happy in his position at Hamilton's. Chocolate crepes with glazed fruit is one of his favourite recipes.

Chocolate Crepes with Glazed Fruit

  • 250g Cake Flour
  • 125g Cocoa Powder
  • 3 Eggs
  • 2 Tablespoon Sugar
  • 250ml Milk
  • 1/2Teaspoon Salt
  • 1 Teaspoon Baking Powder

Filling:

  • 2 Sliced Bananas
  • 3 Kiwi Fruit ( Peeled and Sliced )
  • 1 Bunch Red Grapes (Deseeded)
  • 1/4 Spanspek ( Sliced )
  • 2 Tablespoons of sugar
  • Sift dry ingredients
  • Add eggs and milk
  • Proceed to make pancakes
  • For the filling, put fruit into saucepan with 2 tablespoons of white sugar, stirring very carefully ( you must not let the fruit become mushy) until sugar is dissolved and fruit is warm. Place pancake onto dinner plate and fold into quarters. Gently spoon fruit into pancake. Garnish with sprinkles of cocoa powder and a sprig of mint.
